  1. Preheat oven to 375°F.
  2. In a mixing bowl, whisk eggs with cottage cheese until fully combined.
  3. Drizzle a medium sized cast iron skillet with EVOO, spread around to prevent sticking.
  4. Layer spinach evenly in skillet, then scatter shredded parmesan on top.
  5. Pour egg mixture over spinach and cheese.
  6. Sprinkle with garlic salt, Italian seasoning, crushed red pepper flakes, and grated parmesan.
  7. Transfer skillet to oven and bake for 20 minutes, or until eggs are set and top is golden. (I typically broil mine on high for the last 2-3 min)
  8. Remove from oven, let rest 5 minutes, then slice and serve.
  9. Optional: Top with hot sauce or a dollop of sour cream.
