  1. Heat olive oil in a large dutch oven or cast iron pot over medium-high heat.
  2. Add garlic and sausage chunks. Cook for about 15 minutes, stirring occasionally, until sausage is browned and cooked through.
  3. Pour in chicken broth and water. Scrape up any browned bits from the bottom of the pot and stir.
  4. Bring to a boil. Add rice and stir in salt, pepper, garlic powder, oregano, and red pepper flakes.
  5. Cover, reduce heat to medium, and cook for about 10 minutes, or until rice is tender and liquid as reduced.
  6. Stir in cheese until melted and creamy. Let it cook for another 2–3 minutes.
  7. Turn off heat and let it sit for a few minutes to cool and thicken slightly.
  8. Top with fresh basil and extra cheese before serving.
