Tomato Beef & Rice Skillet

Quick Tips:

• Use freshly grated Parmesan instead of pre-shredded. It melts more smoothly and makes the sauce extra creamy

• Let the tomato sauce simmer a few extra minutes if you have time. It deepens the flavor and thickens everything up

• Drain some but not all of the beef grease. A little fat adds flavor without making it heavy

• If it feels too thick after adding the rice, splash in a bit of water or broth to loosen it up

• Taste after the Parmesan goes in. The cheese adds salt, so adjust the seasoning at the very end

• This reheats best on the stovetop with a little butter or water stirred in to bring it back to life

Tomato Beef & Rice Skillet

  1. Cook rice according to package directions and set aside.
  2. Heat butter in a large skillet over medium heat. Add garlic and onions, sauté 2–3 minutes until softened.
  3. Stir in tomato paste, then add crushed tomatoes, garlic salt, garlic powder, and oregano. Simmer 5 minutes, taste and adjust seasoning.
  4. Stir in 1/2 cup parmesan cheese until melted and creamy.
  5. In a separate pan, cook ground beef with worcestershire sauce until browned. Drain about half of the grease, then add beef to the tomato sauce.
  6. Add cooked rice and mix until everything is evenly coated and saucy.
  7. Serve warm topped with extra parmesan and fresh parsley.
