Quick Tips:

  • Fresh or frozen cod works — just make sure it’s fully thawed before baking so it cooks evenly and doesn’t turn into a watery mess.

  • Don’t skip the balsamic glaze — it’s the sweet-savory magic that ties the whole dish together. You can grab a bottle at most grocery stores near the oils and vinegars.

  • Not an olive fan? Sub in capers or roasted red peppers for a different salty kick.

  • Want to bulk it up? Add some chopped zucchini or bell pepper to the dish before baking. It roasts right along with everything else.

  • No rice? No problem. This works over orzo, couscous, mashed potatoes, or even a crusty piece of bread.

  • Parmesan trick: Use a microplane if you want that fine, melt-into-everything texture. Grated from a bag works too — no judgment.

Instructions

  1. Preheat oven to 400°F.
  2. Place cod in a medium casserole dish. Scatter tomatoes and olives on top.
  3. Pour melted butter over the fish and vegetables.
  4. Sprinkle with garlic powder, oregano, crushed red pepper, salt, and pepper.
  5. Top with Parmesan and drizzle with balsamic glaze.
  6. Bake for 20-25 minutes, until cod is flaky and opaque.
  7. Remove from oven and drizzle with additional Parmesan & balsamic glaze, if desired.
  8. Serve over warm white rice.
