Beef & Sun-Dried Tomato Stir Fry

Sweet onions, tender steak, and tangy sun-dried tomatoes all piled on rice with a sprinkle of parmesan. Quick, bold, and balanced….the steak and rice mellow out that punchy tomato flavor so it just works.

Quick Tips

  • Slice the steak against the grain so it stays tender.

  • Don’t skip the oil from the sun-dried tomatoes, it adds a ton of flavor.

  • Swap in brown rice or quinoa if you want more fiber.

  • Leftovers? Warm it up in a skillet the next day, and it’s still just as good.
